With its origins in Mon culture, Khao Chae is a cold rice dish that was introduced to the Thai royal family during Rama II’s reign, to be consumed in the heat of the summer. Ours is served the traditional way, with a host of condiments, including spicy shrimp paste balls and pork-stuffed peppers. Celebrate the summer season as kings and queens once did.
